Born From a Family Love of Authentic Pizza
In 1991, Anthony Russo had a dream: to bring the authentic coal-fired pizza tradition of southern Italy to the streets of Carle Place, New York. Armed with a family recipe passed down through generations and an unwavering commitment to quality, Anthony opened the doors to what would become a Long Island institution.
From day one, the philosophy was simple — use the finest ingredients, cook at the highest heat, and treat every guest like family. Our coal-fired ovens, burning at over 800°F, create a crust unlike anything a conventional oven can produce: crispy on the outside, chewy on the inside, with a signature char that tells you it's the real deal.
"The secret isn't in the recipe alone — it's in the fire. Coal gives the pizza a character, a depth of flavor that you simply cannot replicate any other way."
